Then there’s the Christmas baking – everyone loves receiving home-baking at this time of year, but it can take a lot of time to prepare, bake and package. But all you need to take the stress out of your baking are a couple of quick, easy and delicious recipes – that’s where this recipe for Snickerdoodles comes in.

Snickerdoodles are a basic American biscuit that uses brown sugar and cinnamon as its ‘hero’ flavours. Simple to make, delicious to eat and full of flavour, they’re one American tradition well worth adopting!

What make the biscuits even better is that they’re really simple to make – just cream the butter and sugars, add a couple of eggs, then stir in the dry ingredients. Voila! The dough is finished. After a bit of time chilling in the fridge, simply roll the dough into balls and coat in a combination of caster sugar and cinnamon before baking.

Ingredients

  • 226g butter, softened
  • 1 cup caster sugar
  • 2/3 cup brown sugar, packed
  • 2 eggs
  • 1 tsp vanilla essence
  • 3 cups plain flour
  • 1 tsp baking soda
  • ½ tsp cream of tartar
  • 4 Tbsp caster sugar (for rolling)
  • 2 tsp ground cinnamon (for rolling)

Method

  1. Cream together butter and two sugars until pale and fluffy. Add eggs and mix until well combined.
  2. In a separate bowl, whisk together flour, baking soda and cream of tartar. Add to wet ingredients and mix until well combined.
  3. Cover dough and chill in fridge for one hour.
  4. Preheat oven to 175 degrees Celsius and line baking trays with parchment paper.
  5. In a small bowl combined caster sugar and cinnamon.
  6. Roll dough into balls approx 3cm in diameter. Roll each ball in sugar mixture and place on baking tray, leaving generous gaps between each to allow for spreading.
  7. Bake biscuits for 12-14 minutes. Remove from oven and allow to cool on tray for 5 minutes. Place on wire rack to cool completely.
