Fresh Berry Jelly Whip

Whether you have friends and family coming over for a summer BBQ or you have a desperate need for a sweet treat to enjoy after dinner, it’s always a good idea to have a quick and easy summer dessert recipe up your sleeve.

The best summer desserts are quick to make, require absolutely no cooking and can be made using ingredients you are likely to already have tucked away in the pantry. Unfortunately, finding a dessert that ticks all those boxes can be a bit hard – but that’s where this recipe for jelly whip comes in.

For those of you who have never heard of jelly whip, it’s an incredibly light chilled dessert made using just two ingredients – evaporated milk and jelly. The finished dessert is even lighter on the tongue than mousse and much, much easier to make.

Jelly whip is an old favourite at our house – my Mum often made it when I was younger, and her Mum used to make it too! Whether jelly whip is a long-time favourite of yours or something you’ve never heard of, it’s definitely something to try making this summer.

Ingredients

  • 1 can evaporated milk
  • 2 packets jelly
  • 1 punnet fresh berries

Method

  1. Place can of evaporated milk in the freezer for one hour. Meanwhile, mix up a batch of strong jelly by placing two packets of jelly crystals in 2 cups of boiling water. Place in the fridge to cool.
  2. Pour chilled evaporated milk into a bowl and beat until stiff and doubled in size. Add the cooled jelly (it will still be liquid) and beat until totally combined and stiff.
  3. Pour jelly mixture into a large serving bowl (this Multifunctional Glass Stand is perfect) and chill in fridge until set. Top with fresh berries before serving.
