Carmelised Onion & Cheddar Scones
Recipe by the team at Bosco Cafe
Makes: 16 / Prep Time: 20 mins / Cook Time: 15 mins / Skill Level: 1 (Easy)
- 6 onions
- 4 tbsp oil, for cooking
- 6 cups flour
- 2 tbsp baking powder
- 2 tsp salt
- 4 tsp caster sugar
- 6 cups grated tasty cheese
- 600 ml milk (approx.) extra milk and grated tasty cheese, for topping
Pre-heat the oven to 180°C on fan-bake.
Finely slice onions and sauté in oil until soft and caramelised, stirring as needed to prevent them sticking to the pan.
Sift flour, baking powder and salt together and add sugar.
Stir in cheese and add milk.
Mix well to combine, adding a little more milk if necessary.
Turn out onto a floured surface and shape into a rectangle.
Cut in half, and roll each half to form two even squares, about 1 cm thick.
Spread one square with caramelised onion.
Carefully lift the other square and place on top.
Cut into 16 even-sized pieces.
Place on baking trays and brush with milk.
Sprinkle with a little grated cheese.
Bake for approximately 15 minutes, until golden-brown and not too soft to the touch.
